Grilled Zucchini Rollups

I really did not intend to be posting this many recipes on this here blog of mine!! But hey why not.......I got another one for ya! They are called bacon zucchini roll ups!!
I love to cook (in my spare time which I don't have enough of) and modify recipes that look scrumptious to make them my own!!
This weekend we tried something new and healthy (if you don't add the bacon that is.......but that would be awful!! I love me some bacon!!)!!  I saw a picture on the internet of grilled zucchini roll ups that looked SO yummy!! I skimmed through the recipe and decided to make something similar by adding/discarding ingredients to please my taste buds needs !! Here is what I came up with.......I promise its quick and easy!!

What you need:

2 small zucchini
package of goat cheese (I got one with spices and herbs)
lemon juice
chives
basil
salt/pepper
bacon
olive oil

Take your zucchini:



slice it lengthwise (about 1/4 inches thick) sprinkle with salt and pepper:

I would invest in one of those cheese slicer magigers to get even slices (unlike mine!!)!

and drizzle with olive oil:



In a bowl add package of goat cheese


sliced up chives:



juice of a lemon (only to taste....not too much though):


basil (I bought this kind):


and add salt and pepper to taste (not pictured)!!

Fire up your grill:


grill some bacon:


and grill the zucchini until tender (soft enough to fold over).  Add a bacon strip and cheese mixture to one end of zucchini. Roll to make it look something like this:



Enjoy!!

Golfer's Wife

Maybe I should have named this post "Blogger's Husband"?!?!?! Oh well either way, when I'm blogging the hubster (aka 2hotty) is golfing and when he's golfing I'm blogging!! It works out beautifully.  But every once in a while he'll ask me to go with so that I can "watch" him play.  So over the weekend I went for a ride around the golf course while 2hotty did his thang!! I figured if I had to go then so should all of you (only fair, no?!?!) and besides now I can blog about it!!

 It turned out to be a great relaxing time and I will try to go more often!!  It's funny because 2hotty tells me that he's "addicted" to this sport (inside I'm really rolling my eyes!) which is fine with me just as long it doesn't lead to another "addiction".....ahem.... *cough* Tiger Woods *cough*!!

Mmmmkaay so lets go for a ride (can you feel the wind blowing through your hair?!?!?!.......if only the Internet was 4D!!)!!

Scott spotted something in the grass (dun dun dun):



What is that?!?!:



It looked like a balloon tied to a rock......but then this "rock" started to move!! So I ran to see what it was (like a crazy woman with my camera in tow of course!!)!

This is what I found:




His name is Cleo and he belongs to someone that lives on the golf course!! I did meet the owner (of Cleo) and preceded to tell him that he had a cute turtle.......which he then corrected me about how he was a "tortoise" not a turtle!!! HA!! Gosh Joanna, get it together......won't make that mistake again!! Oh and the balloon tied to Cleo's shell helps the owner from losing him.....HA!!
So far a pretty interesting fun ride, no?!?!?

OK back to GOLF (I always get SO distracted)!!

I don't think he's doing too good (as he mumbled something about me being bad luck and how I don't have to take any more pictures) haha!! Wait a minute buddy.......who asked ME to come with?!?!! haha!

............and get out of there before anyone could see him (as I was snapping away with evidence!!! I'm such a good wife!!) Walk of shame hunny:

So how was the ride?!?! Did it seem peaceful and relaxing?!?!? Do you enjoy "watching" your significant other play a sport like I do (well for the most part)??

I had a great time enjoying the outdoors and most of all spending some quality time with the hubster while he played a sport that he's "addicted" to!! He once ruled and roamed this same golf course as a youngster and now gets to do it again as an adult. Except this time he's no longer running amuck and getting into trouble (or is he?!?!)!! I hope he continues to enjoy this expensive fun sport just as long as he doesn't get all Tiger Woods on me (Scott are you reading this?!?!)!!!

"D" Day

Not only was it Daddy's day this past Sunday, It was also my Godchild, Dominik's, 5th birthday!! Double the pleasure double fun, right?!?!  I cant believe this "practice" child of mine is already five......I know everyone says this.....but seriously where did the time go!!! 

We started out the morning getting all dressed up and ready to go to a father's day brunch at the country club where Scotty is a golf member at!!  Let me just tell you nothing says "manly brunch grub" like having prime rib, ribs, bacon, sausage, and shrimp all in one sitting!! I mean it was only 10:30 a.m. when we got there but the boys were in clogged artery heaven!!  As for the ladies they had a dessert spread that made us grin from ear to ear!! Oh yes we enjoyed chocolate covered strawberries, french silk pie, gooey chocolate brownies, and so much more!! We were originally suppose to go with my parents and my in laws but unfortunately my parents couldn't make it....boo!!

This is my fabulous in law duo!! I could not have asked for a better set as these two!!! You often hear horror stories about people hating on there mother in law or father in law or even both, but ME I am nothing but loving on these two! When I married Scott almost four years ago, these two were behind us every step of the way and I am sooo THANKFUL (like beyond thankful)!! Thank you God for blessing me with these incredible people that have treated me and accepting me nothing less than their own!! Oh and since it was all about Fathers I just wanted to thank my father in law who is a funny "say it like it is" kinda man for always keeping it real and making me laugh!! You are loved!


To my fabulous parents who have brought up such wonderful children......we are ever so thankful for everything you have thought us!!  I now know what it is that you were trying to preach all of those years about being a respectful, hard working, funny but also serious kinda lady!! You have both been so accepting and loving of my husband and that makes me extremely happy!! Thank you for taking us in and giving us a lovely home to stay in as we figure out what our career paths will be!! My father is a hard working independent  kinda guy who sure does know how to maintain a lovely home (just look at his lawn.....always looking greener than our neighbors!)  I am so thankful for my dad (AKA Frank the Tank!)!! You are loved!!



After eating embarrassing amounts of food (and being induced in a food coma) the ladies headed back home to take a nap while the men headed out on the golf course!! It was just so sweet seeing all the daddies and their sons out golfing together......it made me smile!!


We still had a birthday party to get too!!
